Buckwheat Crepes With Sesame Eggplant, Mushrooms and Scrambled Tofu

Savoury crepes? Why not?!

These buckwheat crepes are healthy, gluten free, high in protein and fiber and packed with nutrients and antioxidants. Tofu, mushrooms and sesame seeds provide some extra protein! They’re perfect for breakfast, lunch or dinner.

Cook the buckwheat crepes. Stir fry the button mushrooms, cook the eggplant and mix in the sesame seeds. I already posted a recipe for scrambled tofu a while ago (only halve all the ingredients!!!). Fill the crepes with tofu, mushrooms, sesame eggplant and top with hemp seeds and nutritional yeast (optional) and enjoy!

Buckwheat Crepes With Sesame Eggplant, Mushrooms and Scrambled Tofu

Serves: about 6 crepes

Ingredients

For the crepes:
1 cup buckwheat flour
1 1/2 cup water
1 tsp baking powder
1/2  tsp baking soda
a pinch of salt
oil for cooking

For the scrambled tofu:
1/2 package of silken tofu
a pinch of black salt (kala namak)
a pinch of turmeric and paprika powder
a pinch of garlic and onion powder
a pinch of grounded pepper and coriander seeds powder

For the sesame eggplant:
1/2 eggplant
oil for cooking
salt, pepper and ground coriander seeds
2 Tbsp sesame seeds

Mushrooms:
1/2 cup sliced button mushrooms
salt, pepper, garlic powder
oil for cooking

Instructions

1. In a large mixing bowl, whisk together buckwheat flour, water, baking soda, baking powder and salt. Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the pan and cook each crepe for about 2 minutes on each side.

2. Cut the eggplant into small pieces. Heat the oiled pan over medium heat, add eggplant, salt, pepper and coriander, cover and cook until the eggplant is done, stirring every few minutes. When the eggplant is cooked, stir in the sesame seeds. Set aside.

3. In another pan, stir fry the sliced button mushrooms with salt, pepper and garlic powder.

4. Meanwhile, make the scrambled tofu.

5. Fill the crepes with tofu scramble, mushrooms and sesame eggplant, roll and top with nutritional yeast and hemp seeds (optional).
