These zucchini pizza boats are delicious, quick and easy to make and perfect when you’re craving pizza, but want a healthier, low carb version of it. You’ll need zucchini, vegan cheese, tomato sauce and your favourite pizza toppings. That’s it!
Zucchini Pizza Boats
1 cup vegan cheese, grated
1/2 cup tomato sauceyour favourite pizza topping (vegan salami, cherry tomatoes, onion, olives etc.)
1. First, cut the in half lengthwise and scoop out the inside. Spread the tomato sauce inside each zucchini, add vegan cheese and toppings.
2. Bake on 200°C (400°F) for 20 minutes. Serve warm.
