On the weekends, when there’s more time to prepare meals then on the working days, I like to make hearty breakfasts, followed by a cup of coffee and a long walk with my dog (which is my kind of relaxation).
Here are some of my favourite breakfasts, with oats as a main ingredient:
1. Oat pancakes with cashew lemon sauce, warm blueberries, fresh strawberries and banana
For the pancakes, blend oats in a food processor to get oat flour. Mix with 1 tsp chia seeds, 1 tsp flax seeds and oat (or any other plant-based) milk and let the mixture rest for about 10 minutes. Bake on coconut oil and serve with fresh and/or warm fruit and cashew lemon sauce. For the sauce, soak cashews overnight, then blend with a bit of water, squeezed lemon juice, lemon zest, vanilla extract and sweetener of your choice (optional).
2. Coconut yoghurt with fresh fruit, oats and chia seeds
In a bowl, combine sugar free coconut yoghurt, fresh mango (sprinkled with shredded coconut), passion fruit, banana, strawberries and raspberries, oats, chia seeds, dried fruit (such as goji berries) and enjoy!
3. Apple, peanut butter and cinnamon = the best combo!
Combine coconut yoghurt, oats, chia seeds, banana slices, nuts, dried figs or goji berries and apple slices, topped with peanut butter and cinnamon.
Instead of coconut yoghurt, mix oats with plant-based milk. Combine with chia pudding (oat milk + chia seeds, soaked overnight), nuts, apple slices, cinnamon and peanut butter.
4. Overnight minty oats with fresh fruit
Soak the oats in any plant-based milk and put in the fridge overnight. In the morning, combine with banana, fresh strawberries, kiwi and pomegranate and top with fresh mint leaves and coconut chips. So refreshing and perfect for warm days!
5. When craving chocolate…
Cook or soak oats in a plant-based milk. Top with fresh berries, pecans, coconut chips and melted dark chocolate. Heavenly combination!
