Beet Burgers

These are my favourite vegan burgers! Gluten free, healthy and full of flavour! Made without any flour or breadcrumbs. I know I already posted a few recipes with beetroot (like this beet hummus and strawberry beet nice cream), but here’s another one!

I first tried beet burger in some vegan restaurant in Brighton more than 5 years ago and since then I make these patties quite often. You can eat them with basically anything – combine them with salad, rice, mashed potatoes or throw together some badass burgers. The one thing that goes hand in hand with beet burgers is definitely a mustard. Try these out, you won’t be sorry.

Beet Burgers

Serves: around 8-10 burgers

Ingredients

2 raw beets, grated
1 onion, finely chopped
1 cup gluten free rolled oats
1 Tbsp chia seeds
1 Tbsp flax seeds
1/3 tsp garlic powder
½ tsp paprika
1/3 tsp ground coriander seeds
½ tsp turmeric
1 tsp salt
1 Tbsp soy sauce
1 dcl water
coconut (or any other) oil

Instructions

1. In a skillet, heat 1 Tbsp coconut oil and add finely chopped onion and a pinch of salt. Sauté for about 10 minutes.

2. In a bowl, combine sautéed onions, grated beets, rolled oats, chia and flax seeds, soy sauce and water. Let the mixture rest for about 10-15 minutes.

3. Form the mixture into patties.

4. In a skillet, heat some coconut oil and bake patties over medium heat for about 4 minutes on each side.
